– 1 large head of cauliflower, cut into florets
– 1/2 cup raw cashews, soaked and drained
– 1 cup unsweetened almond milk
– 3 tablespoons nutritional yeast
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
– 2 cloves garlic, minced
– Salt and pepper, to taste
– 1/4 cup bread crumbs
– 2 tablespoons chopped fresh parsley optional, for garnish
Instructions:
1. Preheat your oven to 400F 200C.
2. Steam the cauliflower florets until tender, about 10 minutes.
3. In a blender, combine the soaked cashews, almond milk, nutritional yeast, olive oil, lemon juice, garlic, salt, and pepper. Blend until smooth and creamy.
