Ingredients:
– 1 cup Arborio rice or any short-grain rice
– 4 cups milk whole or your preferred type
– 1/2 cup sugar
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– Ground cinnamon for garnish
– Fresh fruit or nuts optional, for garnish
Directions:
1. Rinse the Rice: Begin by rinsing the Arborio rice under cold water until the water runs clear. This removes excess starch and prevents clumping.
2. Cook the Rice: In a medium-sized saucepan, combine the rinsed rice and 2 cups of milk. Bring it to a simmer over medium heat, stirring frequently to prevent sticking. Once it starts to simmer, reduce the heat to low.
3. Add More Milk Gradually: As the rice absorbs the milk, gradually add in the remaining 2 cups, 1/2 cup at a time, while stirring. Continue to simmer gently for 25-30 minutes, or until the rice is tender and creamy.
4. Sweeten and Flavor: Once the rice is cooked through and creamy, stir in the sugar, vanilla extract, and salt. Continue cooking for another 5 minutes, allowing the flavors to blend.
5. Serve: Remove from heat and let the rice pudding cool slightly. Serve warm or chilled, garnished with a sprinkle of ground cinnamon. You can also add fresh fruit or nuts for extra texture and flavor.
