Creamy Pasta Bake with Cherry Tomatoes and Basil
Ingredients:
12 oz penne or rigatoni pasta, cooked al dente
1 tbsp olive oil
2 garlic cloves, minced
1 pint cherry tomatoes, halved
1 cup heavy cream
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup Parmesan cheese, grated
1/4 tsp dried oregano
1/4 tsp red pepper flakes optional
1/4 cup fresh basil, chopped
Salt and pepper, to taste
Instructions:
1 Preheat the oven to 375F 190C.
2 Heat olive oil in a large skillet over medium heat. Sauté garlic for 1 minute until fragrant.
3 Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes, until softened.
4 Stir in the heavy cream, ricotta cheese, mozzarella cheese, and Parmesan. Season with oregano, red pepper flakes, salt, and pepper.
5 Add the cooked pasta to the skillet and toss to combine.
6 Transfer the pasta mixture to a baking dish and top with the remaining mozzarella cheese.
7 Bake for 20-25 minutes, until the cheese is golden and bubbly.
8 Garnish with fresh basil before serving. Enjoy!
