Creamy Chicken Penne Pasta
Ingredients:
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper to taste
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon red pepper flakes optional
3 cups penne pasta, uncooked
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup mozzarella cheese, shredded
2 tablespoons fresh parsley, chopped for garnish
Directions:
Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook for 6-8 minutes until golden and fully cooked. Remove the chicken from the skillet and set aside.
Sauté Garlic and Spices: In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the minced garlic, oregano, paprika, and red pepper flakes if using. Sauté for about 1-2 minutes, until fragrant.
Cook the Pasta: Add the uncooked penne pasta, chicken broth, and heavy cream to the skillet. Stir to combine, then bring to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened.
Add Cheese: Stir in the Parmesan and mozzarella cheese until melted and creamy. If the sauce becomes too thick, add a splash of chicken broth or water to loosen it up.
Combine with Chicken: Add the cooked chicken back into the skillet and toss everything together until the chicken is well-coated with the creamy sauce.
