Cottage Cheese Bread
Ingredients:
1 cup cottage cheese
2 cups all-purpose flour
1/2 cup unsalted butter, softened
1/2 cup sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
2 large eggs
1 tsp vanilla extract
1 tbsp lemon zest optional, for added flavor
Instructions:
1 Preheat your oven to 350F 175C. Grease a loaf pan and set aside.
2 In a mixing bowl, cream the butter and sugar together until light and fluffy.
3 Add the cottage cheese, eggs, and vanilla extract to the butter mixture, and mix until smooth.
4 In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
5 Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
6 Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack. Serve sliced and enjoy!
