1 1/2 cups chocolate sandwich cookies, coarsely chopped like Oreos
Instructions
Preheat the Oven: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper.
Make the Dough: In a large mixing bowl, beat the softened butter and cream cheese until smooth and creamy. Add the granulated sugar and continue to beat until light and fluffy. Beat in the egg and vanilla extract until fully combined.
Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in Cookies: Gently fold the chopped chocolate sandwich cookies into the dough.
Scoop and Bake: Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing the cookies about 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
Cool and Serve: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy with a glass of milk or your favorite beverage!
