Classic Maryland Crab Cakes
Ingredients:
1 pound crabmeat, drained and flaked
1 egg, beaten
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay seasoning
1/2 teaspoon lemon juice
1 1/2 teaspoons fresh parsley, chopped
2/3 cup saltine crackers, crushed
1 tablespoon butter for frying
Directions:
Prepare the Crab Mixture: In a large bowl, combine the crabmeat, beaten egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon juice, and chopped parsley. Mix gently to avoid breaking up the crab meat too much.
Add the Crackers: Gently fold in the crushed saltine crackers until the mixture binds together. You want a consistency that holds its shape but isnt too dry.
Form the Crab Cakes: Shape the crab mixture into 6 small or 4 large patties, pressing them together firmly but gently.
Chill the Cakes: For best results, refrigerate the crab cakes for about 30 minutes. This helps them firm up and prevents them from falling apart during cooking.
Fry the Crab Cakes: Heat the butter in a large skillet over medium heat. Once the butter is melted and hot, carefully place the crab cakes in the skillet. Fry for 4-5 minutes on each side, until golden brown and crispy.
Serve: Remove the crab cakes from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve immediately with lemon wedges or your favorite dipping sauce.
