Ingredients:
– 4 large apples Honeycrisp or Granny Smith
– 8 oz 225 g cream cheese, softened
– cup 50 g granulated sugar
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– teaspoon ground nutmeg
– cup 60 mL heavy cream
– 2 tablespoons graham cracker crumbs for topping
– Caramel sauce optional, for drizzling
Directions:
1. Preheat the Oven:
Preheat your oven to 350F 175C and line a baking dish with parchment paper.
2. Prepare the Apples:
Slice off the tops of the apples and use a spoon or melon baller to hollow out the centers, removing the core and seeds while leaving enough apple flesh to create a sturdy shell. Set the apples aside.
3. Make the Cheesecake Filling:
In a medium bowl, beat the softened cream cheese and granulated sugar until smooth. Add the vanilla extract, ground cinnamon, ground nutmeg, and heavy cream, mixing until fully combined and creamy.
4. Stuff the Apples:
Spoon the cheesecake mixture into the hollowed-out apples, filling them generously. Sprinkle graham cracker crumbs on top for a crunchy texture.
5. Bake the Apples:
Place the stuffed apples in the prepared baking dish. Bake for 25-30 minutes, or until the apples are tender but still hold their shape. The cheesecake filling should be slightly set and creamy.
