Christmas Ooey Gooey Butter Cookies
Ingredients:
1 box of yellow cake mix or white cake mix for a lighter color
1 8 oz package cream cheese, softened
1/2 cup 1 stick unsalted butter, softened
1 large egg
1/2 teaspoon vanilla extract
Powdered sugar for rolling
Optional: Red and green sprinkles for a festive touch
Instructions:
Preheat the oven to 350F 175C. Line a baking sheet with parchment paper or lightly grease it.
Mix the dough: In a large bowl, combine the cake mix, softened cream cheese, butter, egg, and vanilla extract. Beat until smooth. The dough will be thick and sticky.
Chill the dough: Cover the dough and refrigerate for at least 30 minutes. This makes it easier to handle when rolling into balls.
Form the cookies: After chilling, use a spoon or cookie scoop to form small balls of dough, about 1 tablespoon each. Roll them in powdered sugar until well coated.
Bake: Place the dough balls on the prepared baking sheet about 2 inches apart. Bake for 10-12 minutes, or until the edges are just lightly golden but the centers are still soft.
Cool and decorate: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack. For extra holiday flair, you can sprinkle the cooled cookies with red and green sprinkles.
