Christmas Cake

A festive, flavorful cake thats perfect for the holiday season!

Ingredients:

2 cups all-purpose flour

1 1/2 cups mixed dried fruit raisins, currants, sultanas

1/2 cup candied peel

1/2 cup chopped walnuts or almonds optional

1 cup butter softened

1 cup brown sugar

4 large eggs

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground cloves

1 tsp vanilla extract

1/4 cup milk


1 tsp baking powder

1/2 cup orange juice optional for flavor

Instructions:

Preheat your oven to 325F 165C. Grease and line an 8-inch round cake pan.

In a large bowl, cream the butter and brown sugar together until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Sift the flour, baking powder, and spices, then gently fold them into the wet ingredients.

Stir in the mixed dried fruit, candied peel, chopped nuts if using, and orange juice if using.

Add the milk and vanilla extract and mix to combine.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Frost or decorate as desired!
