Chocolate Lava Brownie Cookies Recipe
These cookies combine the gooey, molten center of a chocolate lava cake with the rich, fudgy texture of a brownie an irresistible dessert for any chocolate lover!
Ingredients
For the Cookies
1 cup semi-sweet chocolate chips : Melted for a rich chocolate base.
1/4 cup unsalted butter 杻: Adds moisture and richness.
2 large eggs 讀: For structure and binding.
1/2 cup granulated sugar: Provides sweetness.
1/2 cup brown sugar, packed: Adds moisture and a subtle caramel flavor.
1 teaspoon vanilla extract : Enhances the chocolate flavor.
1/2 cup all-purpose flour: Provides structure to the cookies.
1/4 teaspoon baking powder: Gives a slight lift.
1/4 teaspoon salt: Balances the sweetness.
For the Lava Center
12 pieces of dark chocolate or chocolate truffles: These create the molten center.
Instructions
Step 1: Prep and Melt Chocolate
Preheat your oven to 350F 175C and line a baking sheet with parchment paper.
In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring after each interval until smooth. Set aside to cool slightly.
Step 2: Prepare the Cookie Dough
In a mixing bowl, beat the eggs, granulated sugar, brown sugar, and vanilla extract until light and fluffy about 23 minutes.
Gradually add the melted chocolate mixture and mix until combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be sticky.
Step 3: Assemble the Cookies
Scoop about 2 tablespoons of dough and flatten slightly in your hand.
Place a piece of dark chocolate or a truffle in the center and wrap the dough around it, rolling into a ball.
Place the dough balls on the prepared baking sheet, spaced 2 inches apart.
Step 4: Bake
Bake for 1012 minutes, or until the edges are set but the centers are still soft.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
