Ingredients:
– 1 cups all-purpose flour
– 2 large eggs
– 1 cup boiling water
– 1 cups granulated sugar
– cup heavy cream
– cup unsweetened cocoa powder
– cup vegetable oil
– 1 tsp salt
– 1 tsp baking powder
– cup chocolate ganache or melted chocolate
– 3 cups powdered sugar
– 2 tsp vanilla extract
– 1 tsp baking soda
– 10 oz unsalted butter, softened
– 2 tbsp powdered sugar for decoration
– tsp vanilla extract for decoration
– 1 cup heavy whipping cream
Instructions:
1. Preheat your oven to 350F 175C. Grease and flour two 9-inch round cake pans to ensure smooth removal later.
2. In a mixing bowl, sift together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. This will combine the dry ingredients evenly and incorporate air for a lighter cake.
3. Add the eggs, vegetable oil, milk, and vanilla extract to the dry ingredients. Beat with a mixer on medium speed for about 2 minutes, until the mixture is well combined.
4. Carefully stir in the boiling water; the batter will be thin, which is perfect for a moist cake.
5. Divide the batter equally between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
6. Once baked, allow the cakes to cool in the pans for 10 minutes. Then, transfer them to wire racks to cool completely.
7. While the cakes are cooling, prepare the chocolate frosting. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until fully combined.
8. Pour in the heavy cream and vanilla extract, then whip the frosting until its light and fluffy, around 3-4 minutes.
9. Once your cake layers are completely cooled, place one layer on a serving plate. Spread a generous amount of frosting over the top, then gently place the second layer on top.
10. Frost the top and sides of the stacked cake with the remaining frosting, smoothing it out for a nice finish.
11. For the decoration, in a separate bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Use this to pipe swirls around the edges of the cake.
12. Finally, drizzle a decorative grid pattern on top using the chocolate ganache or melted chocolate for that eye-catching finish!
