Ingredients:

– cup 115 g unsalted butter, softened

– 1 cup 200 g granulated sugar

– 1 large egg

– 1 teaspoons vanilla extract

– 1 jar 10 oz maraschino cherries, drained and juice reserved

For the Chocolate Frosting:

– 1 cup 170 g semi-sweet chocolate chips

– cup 120 mL sweetened condensed milk

– 1 tablespoon maraschino cherry juice

Directions:

1. Preheat the Oven:

Preheat your oven to 350F 175C and line baking sheets with parchment paper.


2. Mix Dry Ingredients:

In a medium bowl, whisk together the flour, cocoa powder, salt, baking powder, and baking soda. Set aside.

3. Cream Butter and Sugar:

In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully combined.

4. Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. Shape the Cookies:

Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Using your thumb, make an indentation in the center of each cookie. Place one maraschino cherry in the center of each indentation.

6. Make the Chocolate Frosting:

In a small saucepan, melt the semi-sweet chocolate chips and sweetened condensed milk over low heat, stirring constantly until smooth. Remove from heat and stir in 1 tablespoon of reserved cherry juice.

7. Top the Cookies:

Spoon about 1 teaspoon of the chocolate frosting over each cherry, making sure to cover the cherry completely.

8. Bake the Cookies:

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set. Remove from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

9. Serve:
