Chocolate Chip Peanut Butter Cookies
Ingredients:
2 cups chocolate chips
1/2 cup brown sugar
2 large eggs
1 cup creamy peanut butter
1/2 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups all-purpose flour
1 cup unsalted butter, softened
2 teaspoons vanilla extract
Instructions:
1. Preheat your oven to 350F 175C and line a baking sheet with parchment paper for easy clean-up.
2. In a large mixing bowl, take some time to cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, creating a lovely base for your cookies.
3. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract to elevate those sweet flavors.
4. In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix this dry blend into the wet mixture until just combined; dont overmix or youll lose that delightful softness.
5. Gently fold in the chocolate chips, distributing them evenly throughout the dough to ensure every bite is filled with chocolatey goodness.
6. Scoop about 1 tablespoon of dough and flatten it slightly. Add a teaspoon of creamy peanut butter in the center, then top it off with another tablespoon of dough, carefully sealing the edges to keep that peanut butter surprise hidden.
7. Place the stuffed dough balls onto your prepared baking sheet, making sure to leave about 2 inches between each one, giving them room to spread.
8. Bake the cookies for 10-12 minutes, or until they turn a beautiful golden brown around the edges but stay soft in the center. This will give you that perfect chewy texture.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Let them cool completely, if you can resist!
