Chicken, Sausage, Peppers, and Potatoes
A hearty and flavorful one-pan meal packed with tender chicken, savory sausage, and roasted vegetables!
Ingredients:
4 boneless, skinless chicken thighs or breasts
4 chicken sausages check for pork-free options, such as chicken or turkey sausage
2 large bell peppers sliced into strips
1 large onion sliced
2 medium potatoes cubed
3 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp dried oregano
1/2 tsp black pepper
1/2 tsp salt
Fresh parsley chopped, for garnish
Instructions:
Preheat your oven to 400F 200C. Grease a large baking dish or sheet pan.
In a large bowl, combine chicken, sausage, bell peppers, onion, and potatoes. Drizzle with olive oil and season with garlic powder, paprika, oregano, salt, and black pepper. Toss to coat evenly.
Spread the mixture evenly in the prepared baking dish. Arrange the chicken and sausage on top for even cooking.
Bake for 35-40 minutes, stirring halfway through, until the chicken is fully cooked, the sausage is heated through, and the potatoes are tender and golden.
Garnish with fresh parsley and serve hot!
