Chicken Meatballs and Spaghetti
Ingredients:
1 lb ground chicken
1/2 cup breadcrumbs
1/4 cup Parmesan cheese, grated
1 egg
2 tbsp fresh parsley, chopped
2 cloves garlic, minced
Salt and pepper, to taste
1 tbsp olive oil for frying
1 24 oz jar marinara sauce
12 oz spaghetti, cooked and drained
Instructions:
1 Preheat oven to 375F 190C.
2 In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, parsley, garlic, salt, and pepper. Mix until well combined.
3 Form the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
4 Bake the meatballs for 20-25 minutes, until cooked through.
5 While the meatballs bake, heat olive oil in a large skillet over medium heat. Add marinara sauce and bring to a simmer. Once the meatballs are done, add them to the sauce and cook for an additional 10 minutes.
6 Serve the meatballs and sauce over the cooked spaghetti. Enjoy!
