Chicken Breasts with Chipotle Green Onion Gravy
A flavorful and smoky dish with a rich, creamy gravy!
Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
Salt and pepper to taste
2 tbsp butter
2 tbsp all-purpose flour
1 1/2 cups chicken broth
1/2 cup heavy cream
1-2 chipotle peppers in adobo sauce chopped
3 green onions sliced
Instructions:
Season the chicken breasts with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side, or until golden brown and fully cooked. Remove and set aside.
In the same skillet, melt the butter. Stir in the flour to make a roux and cook for 1-2 minutes until lightly golden.
Gradually whisk in the chicken broth and cook until the mixture thickens, about 3-4 minutes.
Stir in the heavy cream, chipotle peppers, and sliced green onions. Simmer for 2-3 minutes until heated through.
Return the chicken breasts to the skillet, spooning the gravy over them. Simmer for another 2-3 minutes.
Serve hot with mashed potatoes, rice, or roasted vegetables.
