Chicken and Rice One-Pot Dinner
Ingredients:
– 2 boneless, skinless chicken breasts or thighs
– 1 tablespoon olive oil
– 1 small onion, diced
– 3 cloves garlic, minced
– 1 cups long-grain rice, rinsed
– 3 cups chicken broth
– 1 teaspoon soy sauce
– 1 teaspoon sesame oil
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon ground turmeric optional, for color
– 1 cup frozen peas and carrots
– 2 green onions, chopped for garnish
Directions:
1. Sear the Chicken: Heat olive oil in a large pot or Dutch oven over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Sear the chicken for 3-4 minutes on each side until golden brown but not fully cooked. Remove from the pot and set aside.
2. Sauté Aromatics: In the same pot, add the diced onion and garlic. Cook for 2-3 minutes until fragrant and the onions are softened.
3. Add Rice and Broth: Stir in the rinsed rice, making sure it gets coated with the onion and garlic mixture. Add the chicken broth, soy sauce, sesame oil, salt, black pepper, and ground turmeric if using. Stir to combine.
4. Return the Chicken and Simmer: Place the seared chicken breasts back into the pot on top of the rice. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is fully cooked and the chicken reaches an internal temperature of 165F 74C.
5. Add Vegetables: When the rice is almost done, stir in the frozen peas and carrots. Cover and cook for an additional 5 minutes until the vegetables are tender and everything is heated through.
6. Serve: Remove the chicken, slice or shred it, and serve it over the rice. Garnish with chopped green onions and enjoy this delicious one-pot meal!
