Chef Johns Spaghetti with Red Clam Sauce

Ingredients:

1 lb spaghetti

2 tbsp olive oil

4 cloves garlic, minced

1 28 oz can crushed tomatoes

1/2 cup white wine optional, can substitute with more broth

2 tbsp tomato paste

1/4 tsp red pepper flakes optional

1 can 6.5 oz chopped clams, drained, juice reserved

1/4 cup fresh parsley, chopped


Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions:

1 Cook spaghetti in salted boiling water until al dente. Drain, reserving 1 cup of pasta water.

2 Heat olive oil in a large skillet over medium heat. Sauté the garlic until fragrant.

3 Add the crushed tomatoes, wine if using, tomato paste, and red pepper flakes if using. Simmer for 10-15 minutes to combine the flavors.

4 Add the clams and reserved clam juice to the sauce, and simmer for an additional 5-7 minutes.

5 Toss the cooked spaghetti with the sauce, adding reserved pasta water as needed for consistency.

6 Stir in fresh parsley and season with salt and pepper.

7 Serve with grated Parmesan cheese. Enjoy!
