Chef Johns Hamburger Hash
Ingredients:
1 lb ground beef
1 medium onion, chopped
2 medium potatoes, peeled and diced
1 bell pepper, diced
2 cloves garlic, minced
1 tsp paprika
Salt and black pepper to taste
2 tbsp olive oil
1/2 cup beef broth
2 eggs for frying, optional
Fresh parsley, chopped for garnish
Instructions:
1 In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
2 Add the chopped onion, potatoes, and bell pepper. Stir and cook until the vegetables begin to soften, about 10-12 minutes.
3 Add the minced garlic, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
4 Pour in the beef broth and let simmer until the potatoes are tender and the liquid is absorbed, about 5-7 minutes.
5 In a separate skillet, fry two eggs to your desired doneness.
6 Serve the hamburger hash with the fried eggs on top, garnished with fresh parsley.
