Ingredients:
2 tbsp olive oil
2 lbs baby potatoes, halved
1 packet 1 oz ranch seasoning mix
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper to taste
1 cup shredded cheddar cheese
2 tbsp fresh parsley, chopped for garnish
Instructions:
1. Preheat your oven to 400F 200C and line a large baking sheet with parchment paper or lightly grease it with cooking spray.
2. In a large mixing bowl, toss the halved baby potatoes with olive oil, ranch seasoning mix, garlic powder, smoked paprika, salt, and black pepper. Mix until the potatoes are evenly coated with the seasoning.
3. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast them in the preheated oven for 25-30 minutes, flipping halfway through, until they turn golden brown and crispy on the edges.
