Carrot, Potato, and Cabbage Soup
Ingredients:
3 carrots, peeled and chopped
2 medium potatoes, peeled and diced
1/2 small cabbage, shredded
1 onion, finely chopped
3 garlic cloves, minced
6 cups vegetable broth
2 tbsp olive oil
1 tsp paprika
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:
1 Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant.
2 Add carrots and potatoes, cook for 5 minutes.
3 Stir in cabbage and paprika, cooking for another 3 minutes.
4 Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
5 Season with salt and pepper, garnish with fresh parsley, and serve hot.
