Broccoli Cheddar Chicken Rollups
Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup broccoli florets, finely chopped
– 1 cup shredded cheddar cheese
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– Salt and pepper to taste
– 1/2 cup breadcrumbs
– 1/4 cup grated Parmesan cheese
– 2 tablespoons olive oil
– 1 egg, beaten
Directions:
1. Preheat the Oven: Preheat your oven to 375F 190C and line a baking sheet with parchment paper.
2. Prepare the Filling: In a bowl, combine the chopped broccoli, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper.
3. Prepare the Chicken: Pound each chicken breast to about 1/4-inch thickness between two pieces of plastic wrap.
4. Stuff and Roll: Place 2-3 tablespoons of the broccoli cheddar filling onto each chicken breast. Roll the chicken tightly around the filling and secure with toothpicks if needed.
5. Coat the Rollups: In a separate bowl, combine breadcrumbs and grated Parmesan cheese. Dip each chicken roll in the beaten egg, then coat with the breadcrumb mixture.
6. Bake: Place the chicken rollups on the prepared baking sheet, drizzle with olive oil, and bake for 25-30 minutes, or until the chicken is cooked through and the outside is golden and crispy.
7. Serve: Remove the toothpicks, slice the rollups, and serve hot.
