Boscobel Beach Ginger Cake

A warm, spiced ginger cake thats perfect for cozying up by the beach or any occasion!

Ingredients:

2 cups all-purpose flour

1 tbsp ground ginger

1 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground cloves

1/2 tsp salt

1/2 cup unsalted butter softened

1 cup granulated sugar

2 large eggs

1 cup buttermilk

1/2 cup molasses


1/4 cup chopped crystallized ginger optional

1/4 cup boiling water

Instructions:

Preheat your oven to 350F 175C. Grease and flour a 9-inch cake pan.

In a medium bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt.

In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.

Stir in the molasses and buttermilk, mixing until smooth.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Pour in the boiling water and mix gently the batter will be thin.

If using, fold in the chopped crystallized ginger.

Pour the batter into the prepared pan and smooth the top.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
