Blueberry Rice Krispies
Ingredients:
For the Rice Krispies Base:
6 cups Rice Krispies cereal
10 oz 1 bag marshmallows
4 tbsp unsalted butter
1 tsp vanilla extract
1/4 tsp salt
For the Blueberry Layer:
1 cup fresh or frozen blueberries
1/4 cup granulated sugar
1 tbsp lemon juice
1 tsp cornstarch optional, for thickening
Optional Toppings:
1/2 cup white chocolate, melted
Fresh blueberries for garnish
Directions:
1. Make the Blueberry Sauce:
In a small saucepan over medium heat, combine blueberries, sugar, and lemon juice.
Stir and cook for 57 minutes until the berries break down and release their juices.
For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and stir into the blueberries. Cook for another minute until thickened.
Remove from heat and let it cool completely.
2. Prepare the Rice Krispies Base:
In a large pot, melt the butter over low heat. Add marshmallows, stirring constantly until fully melted.
Stir in vanilla extract and salt.
Remove from heat and quickly fold in the Rice Krispies cereal until fully coated.
3. Assemble the Layers:
Press half of the Rice Krispies mixture into a greased or parchment-lined 9×13-inch pan. Use a spatula or your hands lightly greased to pack it evenly.
Spread the cooled blueberry sauce evenly over the Rice Krispies layer.
Gently press the remaining Rice Krispies mixture over the blueberry layer to cover it.
4. Add the Toppings:
Drizzle melted white chocolate over the top for a sweet finish.
Garnish with fresh blueberries for a pop of color and extra fruity flavor.
5. Let It Set:
Allow the Rice Krispies to cool and set at room temperature for about 30 minutes.
Slice into squares or bars and serve!
