Black Bean Breakfast Bowl
Ingredients:
1 cup cooked black beans, drained and rinsed
2 large eggs
1/2 cup diced avocado
1/4 cup cherry tomatoes, halved
1/4 cup corn kernels fresh, frozen, or canned
1 tbsp olive oil
1/4 tsp chili powder
Salt and pepper to taste
Fresh cilantro, chopped
1 tbsp lime juice
Optional toppings: salsa, hot sauce, shredded cheese
Instructions:
1 Heat olive oil in a skillet over medium heat. Add the black beans and corn, sautéing until warmed through about 3-4 minutes.
2 Season with chili powder, salt, and pepper, then remove from heat.
3 In a separate pan, cook the eggs to your liking scrambled, fried, or poached.
4 In a serving bowl, layer the black bean and corn mixture, avocado, cherry tomatoes, and cooked eggs.
5 Drizzle with lime juice, and garnish with fresh cilantro.
6 Top with salsa, hot sauce, or shredded cheese for extra flavor if desired.
