These rich and creamy cheesecake bars are infused with Biscoff cookie butter, swirled with caramel, and baked over a buttery Biscoff cookie crust. Perfect for any cookie butter lover!
Ingredients
For the Biscoff Crust:
2 cups Biscoff cookie crumbs
6 tbsp unsalted butter, melted
2 tbsp brown sugar
For the Cheesecake Filling:
16 oz (2 blocks) cream cheese, softened
½ cup sugar
½ cup Biscoff cookie butter
2 eggs
1 tsp vanilla extract
¼ cup sour cream
For the Swirl:
¼ cup Biscoff cookie butter, melted
¼ cup caramel sauce
Instructions
Prepare the Crust:
Preheat oven to 325°F (163°C).
Mix Biscoff cookie crumbs, melted butter, and brown sugar until combined.
Press into the bottom of a 9×9-inch baking pan lined with parchment paper.
Bake for 8 minutes, then let cool.
Make the Cheesecake Batter:
In a bowl, beat cream cheese and sugar until smooth.
Mix in Biscoff cookie butter, eggs, vanilla, and sour cream until fully combined.
Assemble & Bake:
Pour cheesecake batter over the cooled crust.
Drizzle melted Biscoff cookie butter and caramel sauce over the top.
Use a knife or toothpick to create swirls.
Bake for 30-35 minutes or until the center is just set.
Chill & Serve:
Let cool completely, then refrigerate for at least 4 hours.
