Ingredients:

2 1/4 cups all-purpose flour

1/4 cup granulated sugar

1 tsp active dry yeast

1/2 tsp salt

3/4 cup warm water

2 tbsp unsalted butter, melted

2 large eggs

1/4 tsp vanilla extract


Vegetable oil for frying

Powdered sugar for dusting

Instructions:

1 In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes, until it becomes foamy.

2 In a large mixing bowl, combine the flour and salt. Add the yeast mixture, melted butter, eggs, and vanilla extract. Stir until the dough comes together, then knead for about 5 minutes until smooth and elastic.

3 Cover the dough with a clean kitchen towel and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

4 Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut into squares, about 2 inches wide.

5 In a deep frying pan, heat vegetable oil to 350F 175C. Fry the beignets in batches, turning occasionally, for about 2-3 minutes or until golden brown.

6 Remove from the oil and drain on paper towels. Dust with powdered sugar before serving.
