Banana Cookies

Ingredients:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1 cup mashed ripe bananas about 2 medium bananas

2 cups all-purpose flour

1 tsp baking soda

1/4 tsp salt


1/2 tsp cinnamon optional

1 cup chocolate chips or nuts optional

Instructions:

1 Preheat your oven to 375F 190C and line a baking sheet with parchment paper.

2 In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

3 Beat in the egg, vanilla extract, and mashed bananas until smooth.

4 In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon if using. Gradually add the dry mixture to the wet ingredients, stirring until combined.

5 Fold in chocolate chips or nuts if desired.

6 Drop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart.

7 Bake for 10-12 minutes, or until the edges are golden. Allow to cool slightly before transferring to a wire rack.
