This banana bread, made with just four ingredients, gets its rich sweetness from overripe bananas and brown sugar, creating a deliciously sweet loaf with a lovely crust.
Ingredients :
- 5 small ripe bananas with spots.
- 2 large eggs, at room temperature.
- 1/2 cup plus 1 tablespoon packed dark brown sugar, separated.
- 2 cups of self-rising flour.
Instructions :
Step 1:
Collect all the ingredients.

Step 2:
Heat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving a 2-inch overhang on each side, and set it aside.
Step 3:
In a large bowl, mash 4 of the bananas with a fork until mostly smooth, yielding about 1 1/2 cups. Add the eggs and 1/2 cup of brown sugar, then stir until everything is well combined.
Step 4:
Add the flour to the banana mixture and stir gently until just combined, ensuring no dry streaks are left.
Step 5:
Pour the batter into the prepared loaf pan and spread it out evenly.
Step 6:
Slice the remaining banana and place it on top. Sprinkle the remaining 1 tablespoon of brown sugar evenly over the surface.
Step 7:
Bake in the preheated oven for 50 to 55 minutes, or until a wooden pick inserted into the center comes out with a few moist crumbs. Let the loaf cool in the pan on a wire rack for 15 minutes, using the parchment paper overhang to lift it out.
Step 8:
Take the loaf out of the pan, slice, and serve warm.
