Baked Spaghetti Squash Lasagna Style
Ingredients:
1 medium spaghetti squash
1 tbsp olive oil
1 lb ground turkey or chicken optional for a vegetarian version
1 onion, diced
2 cloves garlic, minced
24 oz marinara sauce
1 1/2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and pepper, to taste
Instructions:
1 Preheat the oven to 375F 190C.
2 Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
3 Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast for 30-40 minutes, or until the squash is tender.
4 While the squash is roasting, cook the ground turkey or chicken if using with onion and garlic in a skillet until browned. Add marinara sauce and simmer for 10 minutes.
5 Once the spaghetti squash is cooked, use a fork to scrape the flesh into spaghetti-like strands.
6 In a baking dish, layer spaghetti squash strands, followed by the meat sauce, ricotta cheese, and mozzarella. Repeat the layers, ending with mozzarella and Parmesan on top.
7 Bake for 20 minutes or until the cheese is melted and bubbly. Garnish with fresh basil.
8 Let it cool for a few minutes before serving. Enjoy!
