Baked Italian Chicken Dinner
A hearty and flavorful dish with Italian-seasoned chicken and roasted vegetables!
Ingredients:
4 boneless, skinless chicken breasts
1 cup cherry tomatoes
1 large zucchini sliced
1 red bell pepper sliced
1/2 red onion sliced
3 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese optional
Fresh basil leaves for garnish
Instructions:
Preheat your oven to 400F 200C. Line a large baking sheet or dish with parchment paper or lightly grease it.
Rub the chicken breasts with 1 tablespoon of olive oil and season with garlic powder, oregano, basil, paprika, salt, and pepper.
In a bowl, toss the cherry tomatoes, zucchini, bell pepper, and red onion with the remaining olive oil and a pinch of salt and pepper.
Place the seasoned chicken on the baking sheet and arrange the vegetables around it.
Bake for 25-30 minutes, or until the chicken is fully cooked internal temperature of 165F or 74C and the vegetables are tender.
Optional: Sprinkle Parmesan cheese over the chicken and vegetables during the last 5 minutes of baking.
Garnish with fresh basil before serving and enjoy!
