Baked Chicken Taquitos
Ingredients:
2 cups cooked shredded chicken
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup cream cheese, softened
1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
8-10 small flour or corn tortillas
Cooking spray
Salsa, sour cream, or guacamole for serving
Instructions:
Preheat the Oven: Set your oven to 400F 200C.
Prepare the Filling: In a medium bowl, mix the shredded chicken, cream cheese, cheddar cheese, lime juice, chili powder, cumin, and garlic powder until combined.
Assemble the Taquitos: Lay out the tortillas and spoon 2-3 tablespoons of the chicken mixture onto each tortilla. Roll the tortillas tightly and place them seam-side down on a lined baking sheet.
Bake: Lightly spray the rolled taquitos with cooking spray to help them crisp. Bake for 15-20 minutes, or until golden brown and crispy.
Serve: Enjoy with salsa, sour cream, or guacamole for dipping.
