Baked Chicken Breasts and Vegetables

A simple and nutritious one-pan meal thats perfect for a quick dinner!

Ingredients:

4 boneless, skinless chicken breasts

2 cups mixed vegetables e.g., carrots, broccoli, bell peppers, zucchini

3 tbsp olive oil

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp paprika

1/2 tsp salt


1/4 tsp black pepper

Lemon wedges for serving

Instructions:

Preheat your oven to 400F 200C. Line a large baking sheet with parchment paper or lightly grease it.

Rub the chicken breasts with 1 tablespoon of olive oil, then season with garlic powder, Italian seasoning, paprika, salt, and black pepper.

In a bowl, toss the mixed vegetables with the remaining olive oil and a pinch of salt and pepper.

Arrange the chicken breasts on the baking sheet and scatter the vegetables around them.

Bake for 25-30 minutes, or until the chicken is cooked through internal temperature of 165F or 74C and the vegetables are tender.

Serve hot with lemon wedges for a fresh, zesty flavor.
