Aunt Carols Spinach and Fish Bake

Ingredients:

4 white fish fillets such as cod or haddock

4 cups fresh spinach, chopped

1 onion, chopped

2 cloves garlic, minced

1 tbsp olive oil

1/2 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup heavy cream or milk

1 tbsp lemon juice

Salt and pepper, to taste


Fresh parsley, chopped for garnish

Instructions:

1 Preheat the oven to 375F 190C.

2 Heat olive oil in a skillet over medium heat. Add the onion and garlic, cooking for 5-7 minutes until softened.

3 Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted. Season with salt and pepper.

4 Place the fish fillets in a greased baking dish. Season with salt, pepper, and lemon juice.

5 Spoon the spinach mixture evenly over the fish fillets.

6 In a small bowl, combine the breadcrumbs, Parmesan cheese, and heavy cream or milk. Sprinkle this mixture over the spinach-covered fish.

7 Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

8 Garnish with fresh parsley and serve.
