Alice Springs Chicken Outback Steakhouse Style

Ingredients:

4 boneless chicken breasts

2 cups grated Colby/Jack cheese

6 slices bacon

1 cup sliced mushrooms

1 cup honey

1/2 cup mustard

2 teaspoons dried onion flakes

Instructions:

1. Season the Chicken: Start by sprinkling seasoning salt over the chicken breasts. Rub it in to ensure an even coating. Cover and pop them in the fridge for 30 minutes to let those flavors soak in.

2. Cook the Bacon: Heat a skillet over medium heat and cook the bacon until its crispy, usually about 5 to 7 minutes. Once done, transfer the bacon to a paper towel-lined plate to drain, but keep the delicious grease in the skillet.

3. Fry the Chicken: Using the same skillet with all that tasty bacon grease, carefully add the chicken breasts. Fry them for 3 to 5 minutes on each side until they achieve a beautiful golden brown color. Once seared, place the chicken in a 9×13-inch baking dish.

4. Prepare Honey Mustard Sauce: In a bowl, whisk together the mustard, honey, and dried onion flakes. Taste and tweak the sweetness or tanginess to find your perfect balance.

5. Assemble the Dish: Generously slather the honey mustard sauce over each chicken breast. Then, layer on the sliced mushrooms, crumbled bacon, and top it all off with the grated Colby/Jack cheese.

6. Bake: Preheat your oven to 350F 175C. Bake the assembled dish for 30 minutes, or until the chicken is thoroughly cooked and the cheese is melted and bubbly.

7. Serve: Allow the chicken to rest for a few minutes before serving. For that extra burst of flavor, consider serving with more honey mustard sauce on the side.
