Alaskan Cod and Shrimp with Fresh Tomato

A light, savory seafood dish featuring tender cod, shrimp, and fresh tomatoes in a delightful herb-infused sauce.

Ingredients:

1 lb Alaskan cod fillets cut into portions

1/2 lb shrimp peeled and deveined

2 tbsp olive oil

3 cloves garlic minced

2 cups fresh tomatoes diced

1/2 cup chicken or vegetable broth

1 tsp Italian seasoning

1/4 tsp red pepper flakes optional


Salt and pepper to taste

1 tbsp fresh basil or parsley chopped, for garnish

Instructions:

Heat olive oil in a large skillet over medium heat. Add cod fillets and cook for 2-3 minutes per side until lightly browned. Remove and set aside.

In the same skillet, add garlic and sauté for 1 minute until fragrant.

Stir in the diced tomatoes, broth, Italian seasoning, red pepper flakes if using, salt, and pepper. Simmer for 5-7 minutes, allowing the flavors to blend.

Add the shrimp to the skillet and cook for 2-3 minutes until pink.

Return the cod fillets to the skillet and spoon the tomato mixture over them. Simmer for an additional 2-3 minutes until the cod is fully cooked and flakes easily with a fork.

Garnish with fresh basil or parsley and serve hot with crusty bread, rice, or pasta.
