Chef Johns Chicken and Mushrooms

A savory and comforting dish with tender chicken and a creamy mushroom sauce!

Ingredients:

4 boneless, skinless chicken breasts

2 tbsp olive oil

2 tbsp butter

1 lb mushrooms sliced

3 cloves garlic minced

1/4 cup dry white wine optional, replace with chicken broth for a non-alcoholic version

1 cup chicken broth

1/2 cup heavy cream

1 tsp fresh thyme or 1/2 tsp dried thyme


Salt and pepper to taste

Fresh parsley chopped, for garnish

Instructions:

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.

In the same skillet, melt the butter and add the mushrooms. Cook for 5-7 minutes until they are golden and softened.

Stir in the garlic and cook for 1 minute until fragrant.

Pour in the wine or chicken broth and cook for 2-3 minutes to reduce slightly.

Add the chicken broth, heavy cream, and thyme, stirring to combine. Simmer the sauce for 4-5 minutes until thickened.

Return the chicken breasts to the skillet and spoon the mushroom sauce over them. Simmer for 2-3 minutes to heat through.

Garnish with fresh parsley and serve with mashed potatoes or pasta.
