Asparagus and Mozzarella Stuffed Chicken Breasts
A juicy and flavorful chicken dish filled with melted mozzarella and tender asparagus!
Ingredients:
4 boneless, skinless chicken breasts
8 asparagus spears trimmed
4 slices mozzarella cheese
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1/2 cup grated Parmesan cheese optional
Instructions:
Preheat your oven to 375F 190C.
Use a sharp knife to carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
Season the inside and outside of the chicken breasts with garlic powder, paprika, salt, and pepper.
Place 2 asparagus spears and 1 slice of mozzarella inside each chicken pocket. Use toothpicks to secure the opening if needed.
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked.
Optional: Sprinkle Parmesan cheese over the chicken during the last 5 minutes of baking for extra flavor.
Remove the toothpicks before serving and enjoy!
