Tender Tomato Chicken Breasts

A juicy chicken dish with a rich, tangy tomato sauceperfect for a comforting meal!

Ingredients:

4 boneless, skinless chicken breasts

2 tbsp olive oil

2 cloves garlic minced

1 cup crushed tomatoes

1/2 tsp dried basil

1/2 tsp dried oregano

1/4 tsp red pepper flakes optional

Salt and pepper to taste


1/2 cup shredded mozzarella cheese optional

Fresh basil leaves for garnish

Instructions:

Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side, or until golden brown and fully cooked. Remove from the skillet and set aside.

In the same skillet, add garlic and cook for 1 minute until fragrant.

Stir in the crushed tomatoes, dried basil, oregano, and red pepper flakes if using. Simmer for 5-6 minutes to allow the sauce to thicken slightly.

Return the chicken to the skillet, spooning some sauce over each piece. Simmer for an additional 3-4 minutes to heat the chicken through.

If using, sprinkle mozzarella cheese over the chicken and cover the skillet, cooking until the cheese melts about 2-3 minutes.

Garnish with fresh basil leaves and serve with rice, pasta, or vegetables.
