Grilled Portobello with Basil Mayonnaise Sandwicha

A flavorful, vegetarian sandwich with grilled Portobello mushrooms and a fresh, herb-infused basil mayonnaiseperfect for a satisfying, healthy bite!

Ingredients:

2 large Portobello mushroom caps stems removed

2 slices of whole-grain or sourdough bread

2 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

1/4 cup mayonnaise

1 tbsp fresh basil chopped

1 tsp lemon juice

1 clove garlic minced


1 slice of Swiss or provolone cheese optional

Instructions:

Preheat the grill or a grill pan over medium heat.

Brush the Portobello mushroom caps with olive oil and balsamic vinegar, then season with salt and pepper.

Grill the mushrooms for 5-7 minutes per side, until tender and grill marks appear.

While the mushrooms are grilling, mix the mayonnaise with fresh basil, lemon juice, and minced garlic in a small bowl.

Toast the slices of bread until golden brown.

Spread the basil mayonnaise on one side of each slice of bread.

Once the mushrooms are done, place them on the bread and add a slice of cheese, if using. Top with the second slice of bread.

Slice and serve while hot.
