French Egg and Bacon Sandwich

A rich, savory sandwich with crispy bacon, a perfectly fried egg, and a delicious French twistperfect for a filling breakfast or lunch!

Ingredients:

2 slices of French bread or baguette

1 large egg

2 slices of bacon

1 tbsp butter

Salt and pepper to taste

1 tbsp mayonnaise optional


Fresh arugula or lettuce optional

Instructions:

Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels.

While the bacon is cooking, toast the slices of French bread.

In the same skillet, melt butter and crack the egg into the pan. Fry to your desired doneness sunny side up, over-easy, etc.. Season with salt and pepper.

Spread mayonnaise on one side of the toasted bread, if using.

Place the crispy bacon on one slice of bread, top with the fried egg, and add fresh arugula or lettuce if desired.

Close the sandwich with the second slice of bread and serve hot!
