Cajun Chicken Lasagna
A bold and spicy twist on a classic dish, layered with creamy Cajun flavors and tender chicken!
Ingredients:
9 lasagna noodles cooked according to package instructions
2 cups cooked chicken shredded or diced
2 cups Alfredo sauce store-bought or homemade
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup ricotta cheese
1 tbsp Cajun seasoning
1 bell pepper diced
1 small onion diced
2 tbsp olive oil
2 garlic cloves minced
1/4 tsp salt adjust to taste
Fresh parsley for garnish
Instructions:
Preheat your oven to 375F 190C. Grease a 9×13-inch baking dish.
Heat olive oil in a skillet over medium heat. Sauté the onion, bell pepper, and garlic until softened, about 3-4 minutes. Stir in the Cajun seasoning and cooked chicken, mixing well.
In a bowl, combine ricotta cheese and half of the Parmesan cheese.
Spread a thin layer of Alfredo sauce on the bottom of the baking dish. Add a layer of lasagna noodles, then spread the ricotta mixture, followed by the Cajun chicken and vegetable mixture. Top with mozzarella and a drizzle of Alfredo sauce.
Repeat the layers, finishing with mozzarella and the remaining Parmesan on top.
Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
Let cool slightly, garnish with fresh parsley, and serve hot.
