Slow Cooker Spaghetti Bolognese

Ingredients:

1 lb 450g ground beef or pork or a mix

1 medium onion, finely chopped

3 cloves garlic, minced

1 medium carrot, finely diced

1 celery stalk, finely diced

1 28 oz can crushed tomatoes

1 6 oz can tomato paste

1 cup beef broth or red wine

1 tsp dried oregano

1 tsp dried basil

1/2 tsp dried thyme

1 bay leaf

Salt and pepper to taste


1 tbsp olive oil

1 lb 450g spaghetti, cooked according to package directions

Freshly grated Parmesan cheese and chopped fresh parsley for garnish

Directions:

Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces. Drain any excess fat.

Add the onion, garlic, carrot, and celery to the skillet. Sauté for 5 minutes until the vegetables soften slightly.

Transfer the beef and vegetables to a slow cooker.

Stir in the crushed tomatoes, tomato paste, beef broth or red wine, oregano, basil, thyme, bay leaf, salt, and pepper. Mix until well combined.

Cover and cook on low for 6-8 hours or high for 3-4 hours. Stir occasionally if possible.

Discard the bay leaf before serving. Adjust seasoning as needed.

Serve the Bolognese sauce over cooked spaghetti. Garnish with Parmesan cheese and parsley.
