Creamy Cajun Shrimp and Chicken Pasta
Ingredients:
8 oz fettuccine or penne pasta
2 tbsp olive oil
1/2 lb shrimp, peeled and deveined
1/2 lb chicken breast, cut into bite-sized pieces
1 tbsp Cajun seasoning
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1 tsp smoked paprika
1/2 tsp red pepper flakes optional
1/2 tsp salt adjust to taste
1/4 tsp black pepper
1/2 cup diced tomatoes
1/2 cup bell peppers, sliced
1/4 cup chopped parsley
1/2 cup shredded mozzarella optional
Directions:
Cook the pasta according to package instructions until al dente. Drain and set aside.
Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp and season with 1/2 tbsp Cajun seasoning. Cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
In the same skillet, add another tbsp of olive oil and cook the chicken pieces with the remaining Cajun seasoning until golden and fully cooked. Remove and set aside.
Melt butter in the skillet, then sauté garlic until fragrant. Add diced tomatoes, bell peppers, and red pepper flakes. Cook for 2 minutes.
Pour in heavy cream and chicken broth. Stir in Parmesan cheese, paprika, salt, and black pepper. Let simmer for 3-4 minutes.
Add the cooked pasta, shrimp, and chicken to the sauce. Stir well to coat everything in the creamy Cajun sauce. If using mozzarella, sprinkle on top and let melt.
Garnish with fresh parsley and serve hot.
