Succulent Garlic-Infused Pork Chops with Creamy Mashed Potatoes

Ingredients:

For the Pork Chops:

4 bone-in pork chops

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

1 teaspoon rosemary, finely chopped

Salt and black pepper to taste

Fresh parsley, chopped for garnish

For the Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and cubed

1/2 cup unsalted butter

1 cup whole milk

Salt and pepper to taste

Directions:


Prepare the Mashed Potatoes:

Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.

Bring to a boil and cook until the potatoes are tender about 15-20 minutes.

Drain and return the potatoes to the pot. Add butter, milk, salt, and pepper, then mash until smooth and creamy. Set aside and keep warm.

Cook the Pork Chops:

Season both sides of the pork chops with salt, pepper, thyme, and rosemary.

Heat olive oil in a large skillet over medium-high heat.

Add the pork chops and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the pan and let rest.

Make the Garlic Butter Sauce:

In the same skillet, reduce heat to medium. Add butter and minced garlic.

Stir until the garlic becomes fragrant and the butter is melted and slightly browned.

Finish and Serve:

Return the pork chops to the skillet, spooning the garlic butter sauce over them.

Serve the pork chops alongside the smooth mashed potatoes, garnished with fresh parsley.
