Crispy Bacon and Honey-Glazed Potatoes with a Savory Twist
Ingredients:
1 pound baby potatoes, halved
6 slices bacon, chopped
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
Fresh parsley, chopped for garnish
Directions:
Preheat the oven: Preheat the oven to 400F 200C and line a baking sheet with parchment paper.
Cook the bacon: In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and set aside on paper towels to drain the excess fat.
Prepare the potatoes: In the same skillet, add the olive oil and heat over medium-high heat. Add the halved potatoes and season with salt, pepper, garlic powder, and onion powder. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden brown.
Make the glaze: In a small bowl, whisk together the honey, Dijon mustard, and apple cider vinegar.
Toss the potatoes: Once the potatoes are cooked, drizzle the honey glaze over the potatoes and stir to coat evenly.
Combine with bacon: Sprinkle the cooked bacon over the glazed potatoes and toss again to combine.
Bake: Transfer the potatoes to the prepared baking sheet and roast in the oven for 15-20 minutes, or until the potatoes are tender and crispy.
Serve: Remove from the oven and garnish with fresh parsley before serving.
