Pancake Sausage Casserole
Ingredients:
1 lb 450g breakfast sausage, cooked and crumbled
2 cups pancake mix
1 1/2 cups milk
2 large eggs
1 tsp vanilla extract
1 tbsp maple syrup
1/2 tsp cinnamon optional
1 cup shredded cheddar cheese optional
1/4 cup melted butter
Maple syrup, for serving
Directions:
Preheat the oven to 375F 190C and grease a 9×13-inch baking dish.
In a skillet, cook the sausage over medium heat until browned. Drain excess grease and set aside.
In a large mixing bowl, whisk together the pancake mix, milk, eggs, vanilla extract, and maple syrup until smooth.
Stir in the cooked sausage and shredded cheese if using.
Pour the mixture into the prepared baking dish and drizzle melted butter over the top.
Bake for 25-30 minutes or until golden brown and set in the center.
Let cool slightly before slicing. Serve warm with maple syrup.
