Crispy Bacon-Stuffed Hash Brown Muffins
Ingredients:
4 cups frozen shredded hash browns, thawed and squeezed dry
1 cups shredded cheddar cheese
8 slices cooked bacon, crumbled
4 large eggs
1/4 cup milk
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
2 tablespoons chopped fresh chives
Non-stick cooking spray or melted butter for greasing muffin tin
Directions:
Preheat your oven to 400F 200C. Grease a 12-cup muffin tin thoroughly.
In a large mixing bowl, combine hash browns, 1 cup of cheddar cheese, garlic powder, onion powder, salt, and pepper.
Press the mixture into the bottom and up the sides of each muffin cup to form a crust.
Bake for 15-20 minutes or until the edges are golden and crispy.
While the crusts bake, whisk together eggs, milk, chives, and crumbled bacon in a separate bowl.
Remove the muffin tin from the oven and pour the egg mixture evenly into each hash brown cup.
Sprinkle remaining cup of cheese on top.
Return to oven and bake for another 13-15 minutes, until eggs are set and tops are golden.
Let cool for 5 minutes before removing from the muffin tin. Serve warm.
