Skillet Chicken Pasta
A creamy and delicious one-pan dinner packed with flavor!
Ingredients:
2 tbsp olive oil
1 lb boneless, skinless chicken breasts cut into bite-sized pieces
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
2 cups penne or rotini pasta uncooked
2 1/2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup spinach leaves optional
1/2 cup cherry tomatoes halved, optional
Instructions:
Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with garlic powder, Italian seasoning, salt, and pepper, and cook until golden and fully cooked, about 5-6 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the pasta, chicken broth, and heavy cream. Stir to combine and bring to a gentle boil.
Reduce the heat to low, cover, and simmer for 10-12 minutes, stirring occasionally, until the pasta is tender.
Stir in the Parmesan cheese, cooked chicken, spinach, and cherry tomatoes. Cook for an additional 2-3 minutes until everything is warmed through and the spinach is wilted.
Serve hot and enjoy!
